Delicious Weekend Treat
Looking for a tasty treat – why don’t you try baking Jans strawberry sponge cake! Perfect for afternoon tea!
Easy Peasy Strawberry Jam
Ingredients
- 200g Strawberries
- 150g Caster Sugar
- Juice ½ Lemon
- 20ml Water
Method
- Put all the ingredients in a pot and bring to the boil.
- Reduce the heat and simmer for 10 to 15 minutes or when set on a chilled saucer.
- Transfer to sterilised jars.
- Store for up to 6 months.
Strawberry Teacake
Ingredients
- 60g butter, softened
- 1tsp vanilla extract
- 150g caster sugar
- 150g self raising flour
- 1 egg
- 80ml milk
Filling
- Strawberry jam
- Strawberries
- Cream
Method
- Preheat over to 180 degrees.
- Grease a deep 20cm round cake tin & line the base with parchment paper.
- Beat butter, vanilla extract, sugar & egg in a bowl, with electric mixer until light & fluffy.
- Stir in sifted flour. Add the milk & combine.
- Spread mixture into the tin.
- Bake for about 30 minutes.
- Stand cake in the tin for 5 minutes before turning, top side up into a wire rack.
Jan makes the cake in one baking tin and cut it once it cooled. You could split the mixture and use two sandwich tins to make a Strawberry jam and cream sponge. On the bottom layer include a row of strawberries, then a layer of cream. Finish the top with icing sugar. Delicious!
